When life hands you potatoes, make pancakes! If you’re like me, you stocked up on potatoes and onions in preparation for social distancing, so here we go!

Ingredients:
3 Yukkon Gold Potatoes, grated;
1/2 Red onion, diced;
1/8 Yellow onion, diced;
3/4 Jalapeño, diced;
1/2 Tbsp salt;
1/2 Tbsp pepper;
1/2 Tbsp paprika;
1/3 Cup flour;
1/4 Tsp baking soda; and
Oil for skillet

Directions: Place grated potatoes in a cheese cloth and squeeze the liquid out. Next, place all ingredients, other than the oil, in a large bowl and mix together until combined. Using your hands, form a pancake shape with approx 1/3 cup of the mixture (hint- it will be a little sloppy). Repeat until all of the mixture is used. Heat oil in skillet on medium heat. Place pancake in pan and cook until bottom is brown (approx 4-6 minutes). Flip and repeat. Top with ketchup, apple sauce or vegan ranch (see my vegan ranch recipe in my bbq cauli post)
