Sweet potato gnocchi. Had some extra sweet potato lying around, and happened to find the board during spring cleaning. Ive always wanted to make gnocchi!

Recipe is adapted to be vegan, and made out of gluten free flour mix (buckwheat, lentil, and rice), used almost 1:1 ratio of sweet potato and flour, with some salt. The dough was beautiful, and easy to work with once the sweet potato and flour starts coming together
.
It could be eaten straight away, but I just had lunch at the time, so i froze it and did a quick boil when I made my one pot gnocchi
