ULTIMATE VEGAN BLUEBERRY MUFFINS: not just vegan but also gluten free & refined sugar free 🥳 Honestly this recipe made me so happy , these were the best batch of muffins I’ve EVER whipped up!!
Ingredients:
– 1 cup oat flour
– 1 cup gluten free flour (@healthconnectionwholefoods )(can sub more oat, almond or normal!) – baking powder & baking soda
– 1 flax egg (can use a normal egg if not vegan!)
– 1/2 cup coconut sugar or maple syrup (I used @crede_natural_oils )
– 60 ml nut butter of choice or coconut oil (I used @ohmega_nutbutters tahini) – 1 tablespoon apple cider vinegar
– 1/2 cup @almondbreezesa almond milk – pinch of salt
– as many blueberries as possible
