HOMEMADE NUT (ALMOND) MILK
Trying to switch to plant-based? What to replace regular milk with? Nut milk! And nothing healthier than having your own homemade almond milk! Why? Because I know exactly what I put in it!
3/4 cup almond (soaked overnight)
4 cups filtered water
1/4 tsp salt (none or more to taste)
1-2 tbsp maple syrup (optional)
1 tsp vanilla extract (optional)
1/2 tsp sunflower lecithin (optional but I highly recommend it so the milk is smooth and doesn’t separate)
Put all the ingredients into a high powered blender and blend for 2 minutes until smooth. No need to peel almonds. Pour through nut milk bag (I insert one into another to get double filter) and squeeze (or milk it). Pour into glass container with a lid and store in the fridge for up to 5 days. You’ll get about 1 liter of milk. I usually make a double batch so we have enough for several days. Kids approved!
Don’t get rid of the almond pulp. You can make cookies or crackers out of it. See my future posts!
Almonds contain lots of healthy fats, fiber, protein, magnesium and vitamin E. The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. They can also reduce hunger and promote weight loss.
Sunflower lecithin is rich in choline and other essential fatty acids such as phosphatidylinositol (say that three times fast!), and some people take it as a supplement. Lecithin supplements have been shown to help with acne and improving liver function.
